Ingredients for Chicken Laska
3 tsp oil
400gm chicken breast (cut in cubes)
6Garlic cloves crushed
2tsp Thai red or green curry paste
3 tsp soya sauce
300 ml chicken stock
100gm noodles (boiled and broken up in pieces)
1 tsp sugar
Lemon juice 3tsp
2 tbs coconut milk
120 gm roasted peanuts
Coriander (chopped for garnishing)
Method
Heat oil in a pan and stir garlic for 30 seconds add the curry paste and fry for another30 seconds.
Add chicken and stir in the soya sauce to coat chicken.
Pour in the stock, sugar and noodles.
Add lemon juice, reduce heat and simmer for 10 minute.
Stir in the coconut milk and cook for 2 minutes.
Garnish with coriander and peanuts if you like.
